Pumpkin Muffins
We've been all about pumpkin muffins this week. Two batches and neither has lasted to the next day. Yum!
Here's the recipe (my mom's):
Pumpkin Muffins
Wet ingredients
1 egg
1/2 c. milk
1/2 c. pumpkin
1/4 c. melted butter
Dry ingredients
1 1/2 c. flour (we use whole wheat)
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. each salt, cinnamon & nutmeg
1/2 c. raisins
Mix wet ingredients with dry. The dough is pretty thick, but if it seems too dry, I've been known to add some more milk. Bake at 350 degrees for about 20 minutes.

As soon as I buy some pumpkin, I'll be trying them! But I'll leave out the raisins. They are only good in ravioli.

Hey, at least you're within a day's drive of getting some if you want to! You could overnight some to me... :)
